Apple Streusel Cake

                                          

This delicious cake is quick to prepare.  You will only need a spoon and a bowl.  Moist enough that it does not require cream or anything else to serve.  This recipe was torn out of Super Food Ideas Magazine May 2003.  Yes , it took me that long to get around to it!

Ingredients:

1 1/2 cups self raising flour
1/2 cup plain flour
3/4 cup sugar
180g butter, chopped
3 eggs, lightly beaten
1/3 cup milk
440g can pie apple

For Streusel:
1/2 cup plain flour
1/2 cup brown sugar
1/2 cup dessicated coconut
1/4 cup almond meal
1/4 cup chopped pecans (original recipe used walnuts)
60g butter, melted

Method:
  • Preheat oven to 160c fan forced
  • Sift flours into a bowl. Stir in sugar.
  • Rub in butter with fingertips until mixture is like breadcrumbs
  • Stir in eggs and milk.  It is a thick batter
  • Spread half the mixture into a greased and baking paper lined 23cm round tin (the only 23cm tin I have is a loose bottom cheesecake tin and this is excellent for removing the cake to cool without tipping off the streusel)
  • top with tin apple then spread remaining batter on top
  • for streusel -  combine all ingredients  then sprinkle onto top of cake before baking in the oven for 1 to 1 1/4 hours
  • Cool on  a wire rack

That's a great recipe.

I make Apple Streusel Muffins for my boys. They love them.
This sounds like perfect coffee cake for my morning coffee with my girlfriend.
