I am always curious to try and bake a cake with no butter or eggs. Curious to see how such a mix of ingredients will work. I am not vegan but I do like recipes that a very quick to make and this certainly was. Not as good as Best Ever Chocolate Cupcakes simply because they tasted quite plain without the frosting. Here it is naked without its topping to show that it rises into a nice shape quite well.

Ingredients:(makes 24 cupcakes)
3 cups self raising flour
2 cups sugar
2/3 cup cocoa
2 cups water
2/3 cup canola oil
2 tbsp white vinegar
2 tsp vanilla
Method:
- place all ingredients into mixing bowl and whisk until smooth
- line 1/3 cup muffin tray with cupcake papers
- spoon mixture until 2/3 full
- bake at 160c fan forced for 20-25 minutes

Very interesting recipe. And I'm really impressed how they baked up nicely.
Looks good, but what's the texture like? I'm assuming it would be quite different as eggs contribute to a cake's texture. I've heard of flourless cakes but not egg-less.

These would make a great food storage recipe!If you couldn't get to a store but still wanted a treat, these would be perfect!
