Before baking these, I didn't think it was possible to really enjoy a muffin that doesn't contain chocolate. However, I combined a few recipes to make these as a 'healthier' muffin choice and they were great.
Ingredients
Makes 20
2 1/2 cups self raising flour
pinch salt
110g butter, melted
2/3 cup brown sugar
3 eggs
3 ripe bananas, mashed (medium size)
2/3 cup milk
1 tsp vanilla
1 1/2 cup fresh or frozen raspberries
Method:
- Preheat oven to 160c (180c for conventional oven)
- Sift flour into a bowl
- In a separate bowl, whisk butter and sugar together. Then whisk in eggs
- Add banana, milk and vanilla to butter mixture
- Add flour into bowl and stir until just combined
- Fold in berries
- Bake 20-25 minutes

You've opened yourself up to a whole new world of muffin enjoyment! We really like strawberry muffins and banana muffins in our house. Haven't tried Raspberry and Banana but looks yum.

I make banana bread and muffins all the time but I never thought to put raspberries in them (usually the kids and husband want chocolate chips). I love raspberries...Thanks and great picture too!
