Choc-Chip ANZAC Biscuits

 
Just like traditional ANZAC biscuits but using shredded coconut and chocolate chips.  These ingredients combined nicely with the butterscotch flavour and crispy oats to create a  wonderful  biscuit.

Ingredients
1 cup rolled oats
1 cup plain flour
3/4 cup caster /fine sugar
1/2 cup shredded coconut
125g butter
1/4 cup golden syrup
1/2 tsp bicarb soda
1 cup combination of milk and white chocolate bits

Method
  • Preheat oven to 180c / 160c fan
  • Line 2 trays with paper
  • Combine dry ingredients (except the chocolate)  in a bowl
  • Melt butter and syrup in a saucepan. Add bicarb soda and stir until foamy
  • Pour over dry ingredients and mix with a spoon
  • Stir in chocolate 
  • Place heaped tablespoons onto trays, flattening with hands and allowing for spreading
  • Bake 8-10 minutes until golden
  • Cool on trays
