Just like traditional ANZAC biscuits but using shredded coconut and chocolate chips. These ingredients combined nicely with the butterscotch flavour and crispy oats to create a wonderful biscuit.
Ingredients
1 cup rolled oats
1 cup plain flour
3/4 cup caster /fine sugar
1/2 cup shredded coconut
125g butter
1/4 cup golden syrup
1/2 tsp bicarb soda
1 cup combination of milk and white chocolate bits
Method
- Preheat oven to 180c / 160c fan
- Line 2 trays with paper
- Combine dry ingredients (except the chocolate) in a bowl
- Melt butter and syrup in a saucepan. Add bicarb soda and stir until foamy
- Pour over dry ingredients and mix with a spoon
- Stir in chocolate
- Place heaped tablespoons onto trays, flattening with hands and allowing for spreading
- Bake 8-10 minutes until golden
- Cool on trays
